Recipe: Jujube Coffee Cake

Preheat oven to 325

Lightly grease a 13 by 9-inch baking dish with 2 teaspoons of butter
Bring the following to a boil then set aside to cool
  • 1 cup sugar
  • 1/2 cup butter
  • 2 cups fresh or dried, minced jujube
  • 1 cup water

Sift the following together then add to the above mixture to form a cake batter

  • 2 cups wheat flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt

Pour the cake batter into the baking dish, then combine the following and sprinkle on top (this sprinkled topping is optional…)

  • 1/4 cup packed brown sugar
  • 1/4 cup flour (wheat or white)
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter, softened

Bake at 325° F for 35 minutes
